Our Executive Chef, Scott Freedman, has spent over 50 years working in fine and casual dining, top hotels, country clubs, independently owned concepts, banquet halls, and as a private chef throughout downtown Chicago, and its surrounding suburbs. His experience has allowed Chef Scott to gain the worldly culinary knowledge of a well-traveled, well-seasoned master chef with a vast knowledge of many cultures, foods, flavors, spices and cooking styles. With his background and knowledge, Chef Scott brings passion and dedication to life in our kitchen through bold flavors, creativity and innovation, new looks at old classics, and the strictest adherence to delivering our guests the absolute best. Our Sous Chef, Emily Hernandez, has been working in restaurants since her very first job. Climbing her way through the leadership tree of several top name brands throughout the formative years of her career, this has established her as a dedicated, focused, and creative leader within the kitchen. Her passion for the culinary world was instilled in her since she was a child, growing up watching legendary chefs like Julia Child, Lidia Bastianich, and Simply Ming. As if these titans of influence in the 20th century of culinary world weren’t enough to make a young Chef Emily dream of a life working in kitchens and serving people; she also spent time visiting family living in Brooklyn, witnessing workingclass families of New York, like her own with her grandmother, create delicious meals out of simple ingredients with all influences of the many different cultures that can be found across all Five Boroughs. A career born out of necessity and inspiration, Chef Emily Hernandez’s focus is on bringing bright flavors to the table, allowing the ingredients to speak for themselves and contribute not only to a beautiful dish, but one that is also dynamic, without being over complicated. When asked if she could ever see herself doing anything else other than cooking, Chef Emily simply replies, “I couldn’t, cooking makes me the best version of myself. It balances me and allows me to share my talents with the world through the universal language of sharing a great meal together.” We are excited to have her as part of our culinary team at Neos Eclectic Mediterranean and can’t wait to welcome you to our table.
